Fresh juice is in fact a living food, because it contains enzymes. These enzymes are found in fruit and vegetables and are vital because they assist in many of the chemical processes in the body, particularly digestion. Enzymes are however easily destroyed, especially if they are heated to temperatures above 40 degrees Celsius.
